Found a method of coloring textures that seems more realistic than my previous methods.

I tend to make a selection (always with a feathered edge, amount depends), and in a layer above, use the bucket tool to make a whole area of colour in my selection, and then use a mix of layer modes and opacity to colour the selection under it. I rarely use colourise when skinning, unless I'm changing it all over the model rather than a small area.
