It depends what areas interest you. If bringing new characters to the game is your thing, then skinning is the place to start.
Kitbashing/frankensteining would be the next step up, as it is so easy these days with Blender and mrwonko's plugins - and you'll learn so much just from practicing and running into problems along the way.

That's what the modding section of the forum is for. We'd much rather see people asking questions and learning instead of requesting things. It's more rewarding in the long run too. There are a great number of things that I got into later that I attribute to modding JKA in my early years, like NPC and string files and skinning. Now I do web design and graphic design and get paid to do it.
