I, too, go with the view that Star Wars is a multiverse. And I therefore view the EU as canon, just existing in a parallel universe, with things like alternate endings in games and Infinities being other divergent timelines. So, "It's true. All of it. The Yuuzhan Vong, Revan, Thrawn, they're real."

You didn't look hard enough. This pack includes a shadow trooper: https://jkhub.org/files/file/601-clones-ultima-vm/ The Shadow Commander is Fanon so there is no skin of it, but that can be easily created.

Well, according to the novels, his "canonical" look during JKA is the selectable one that's clean-shaven with short hair.
