There've been pictures of him at Padawan age, but you can also check on Christopher Lee ictures at younger age. The un-robed variants seem to highlight the uncharacteristic flatness of the model's head. As for the aging, perhaps you could use GIMP or some other imaging program to isolate the gray hairs (color select) and darken it to a younger hue? Just an idea.

How I would do it is make a selection around the beard area, copy it onto a new layer above, colourise it a dark brown, and with a layer mask, get rid of the bits of skin around the beard. I would use a feather brush or something to clean up the edges. Circa likes this
