Depends on what you're interested in and how deep you're willing to learn. Skinning and mapping have the least barriers to entry.

I might try and do a frankenstein (spelled it wrong :/) with HapSlash's robes and something else. Won't be published but you got the point.

Skinning is a great place to start. It gets you familiar with the asset structure and pk3 files.
