Hello! I wrote little patch tool/updater for Star Wars: Jedi Knight Dark Forces II (vanilla, not OpenJKDF2), maybe someone find it useful.
It supports original v1.00, v1.01, Steam, v1.01 install distrib and Jedi Knight Dark Forces II Unofficial Patch (2008) executables, and allows:
set custom FOV
remove FPS caps (game and player physics)
disable mipmap and force high LOD
And as a bonus, it will update every supported executable to Unofficial Patch 2008.

Here is description from ReadMe:
JKDF2 FOV patcher v1.0
Recommended to use with jkgfxmod.
In case of OpenJKDF2, "These aren't the droids you're looking for".
This tool allows to patch Jedi Knight Dark Forces II executable with:
- custom FOV
- removing FPS caps (game and player physics)
- disabling mipmapping and forcing high LOD
As a bonus feature, if there is no need in patching mentioned features, it may
just update any supported JK executable to Jedi Knight Dark Forces 2 Unofficial Patch (2008).
This patcher supports:
- Jedi Knight Dark Forces 2 Unofficial Patch (2008) executable (JKUP)
- original Steam executable (JediKnight.exe)
- original JK executables v1.00, v1.01
- original v1.01 installer distrib (jkupd101.exe)
Every supported executable, except JKUP, will be updated to JKUP.
Patcher does not perform backup.
You may restore original state by setting all options to "Enable" and FOV to 90.0
For v1.01 update distributable and Steam executable, updated JKUP executable
will be named JK.EXE and placed together with JK-Extension.dll at the same place, where you opened original file.
For all other variants, original opened file will be overwriten with JKUP after patching.
Remember about writing permissions, you need to have write access to patch file.
With all FPS cap removed, you may need to force vsync for great result.
